Salad jars for on the run

Finding a daily routine is important and will set you up for success. Why? Because routine offers us structure and when achieved it creates a positive and healthy headspace. For example, bringing in routine when making work lunches means you will have healthy meals at work that don’t leave you stressed or in the queue at the coffee shop ordering something sugary and unhealthy. Find a routine that works for you both morning and night and schedule it into your time management. Honour this and see how things change over the space of two weeks. Setting time aside for yourself is important in achieving health goals. Why not try setting ten minutes aside every evening to meal prep these salad jars for work and tune into your energy levels for the week. You might find that your 3PM slump disappears with a nutritious lunch rather than a sugar crash. Other suggestions on routine are to try and bring in five minutes of meditation in the morning and a bit of light exercise. At night why not create a wind down routine such as switching off technology, having a hot bath, reading a book with chamomile tea and preparing for bed? Carving time out for yourself allows your body to heal.   

Salad jars are a great way to make sure you have food on the run. Being prepared is a critical part of healthy eating. You can take them with to the office, or pack them for the beach. If you’re going to be out and about where you won’t be able to find healthy meals on the go, these are perfect for you. Putting them in jars and layering the ingredients appropriately means the leaves won’t wilt and the ingredients will stay fresher than if they were placed in a Tupperware.

Serves: 1

Preparation time: 10 minutes

Cooking time: 10 minutes

 

Dressing

zest and juice of ½ lemon 

½ red chilli, finely chopped 

1 teaspoon honey 

1 tablespoon tahini 

3 tablespoons olive oil 

 

Salad

½ cup chickpeas, cooked 

½ cup quinoa, cooked 

1 handful baby spinach

¼ cup red cabbage, finely chopped 

1 tablespoon kimchi 

1 small handful fresh basil leaves, finely chopped 

2 tablespoons pumpkin seeds 

Place all the dressing ingredients into your salad jar and mix well with a fork. 

Layer the salad on top of the dressing, starting with the chickpeas and followed by the quinoa, spinach, cabbage, kimchi and basil. Finish off with the pumpkin seeds. Do not shake the jar as you don’t want to incorporate the dressing until you’re ready to eat. Seal the jar with the lid and store it in the fridge overnight. Before serving, shake the jar to combine all the ingredients. 

You can play around with different fresh combinations and get creative making lunch at work healthier and easier.

The Victoria and Alfred waterfront is one of those places that I love to hate. There are moments where it can be wildly busy and filled with chaos yet it is also a great spot to grab a bite to eat and get all your shopping done in one place. A few of the spots, however, can be a let down in terms of the quality of food. Maybe it is because I am spoilt for choice with all our amazing restaurants in Cape Town. 

One place I love to love is Mondiall. It is one of those spots at the waterfront that always delivers high-quality food that is beautiful to look at and bursting in flavour.  I recently got to experience their summer menu and it is packed with all things delicious. They have just celebrated their third birthday and talented head chef Stephen Mandes (winner of the "ultimate braai master" tv show) has created a menu that will satisfy a curious palette and has an international culinary influence. 

New on the Summer Menu are dishes ranging from Seafood Ceviche with fresh sweetcorn salsa and crisp taco; and Prawn & Leek Roulade with lentil salad, sugar snap peas and lime aioli; to Spice Crusted Seared Tuna with romesco sauce, crushed new potatoes and gremolata; and Organic Lamb Duo of loin and braised lamb neck served with shaved vegetables and minted jus; ending off on a sweet note with Nutella Cheesecake with honeycomb and berries. 

An expert in ‘cooking over coals’, Mandes uses ‘Green Eggs’ in the Mondiall kitchen to create enticing smoked flavours. His menu incorporates influences from all over the world, as he takes the diner on an adventure to explore the best each cooking style has to offer, from Europe to Asia and crossing over to America.

Mondiall offers various elements on the menu, but also various menus for different occasions to meet the needs of each guest. Breakfast is served (10:00 - 11:30) Monday to Friday and features classics such as the lauded Eggs Benedict. Lunch is served (12:00 - 16:00) accompanied by the Bar Menu (11:00 - 22:00), which features the full spectrum of the newly-launched summer menu daily. This is followed by Happy Hour (where all cocktails and selected craft beers are offered at a 50% discount), as well as the Afternoon menu which highlights the Mondiall Signature Dishes namely – Mondiall’s Signature Fish Tacos and Mondiall’s Famous 100% Wagyu Cheese Burger. Dinner takes place in the evening (18:30 - 22:00) and Brunch is available over weekends (10:00 – 16:00 Sat & Sun), featuring the ultimate Fluffy American Style Pancakes. 

Offering a wide range of choice, the wine list features a variety of cultivars and vintages, consisting predominantly of South Africa’s top wine labels that are exclusively selected to ensure that the cuisine is complemented by the best quality wines.

I always laugh at myself come this time of year. The time of year when I go into a flat panic that I am not “summer” ready.

My tan is non-existent and I look more like a translucent desert gecko than a living, breathing human being.

Oh, and of course, the beach “bod” is never where I want it to be.

Winter has been good to me this year… almost too good.

If winter were a philanthropist, it might be first in line for a Nobel Prize or two.

The truth is I am very far from having the quintessential sun kissed, beach body complete with bespoke bikini.

I have however, taken up a new regime in order to get there.

The first step is to be kind and remind myself that there is no such thing as perfection.

The second step is to incorporate exercise into this daily mantra.  I have begun taking Pilates 3 times a week.

The third (and perhaps most effective catalyst of this new regime) is trying to eat healthier.

It all comes down to making better choices.

Rather than reaching for a packet of crisps - I reach for some fresh carrots and tasty hummus, which I whip up myself.

I have replaced the oh-so-indulgent milky latte’s with peppermint tea and a slice of lemon and to be honest? I’m enjoying the changes.

Naturally I haven’t mastered them but that’s okay, I can only take one step at a time anyway and the plan is to evolve into a healthier version of myself over time.

It’s more sustainable that way.

So, to all the women out there beating themselves up because they don’t look like a supernova in a two-piece, be kind to yourself.
Health is a journey, not a destination.

Of course any journey begins with a simple step, so get off the couch. Take a walk, go for a swim or get to that yoga class you have been promising yourself you were going to do.

This recipe is part of my healthy changes. Rather than toast and cheese for breakfast I include things like chia pudding. I make it with unsweetened almond milk and protein powder from a local super food brand called Wazoogles. Chia seeds are high in fibre, good for digestion and offer omega 3’s. Give it a whirl and try starting your day with this! 


Serves: 2, cook time: 25 minutes 

Ingredients:

Chia Pudding:

  • 4 tablespoon chia seeds
  • 1 cup almond milk
  • 2 teaspoon protein powder (I used Wazoogles)
  • ½ teaspoon honey

Acai Smoothie Layer:

  • 1 tablespoon acai powder (optional)
  • 1 cup fresh strawberries
  • 1 ripe banana
  • 1 tablespoons almond butter (I used buttanut)
  • 2 teaspoon unsweetened desiccated coconut
  • 6 fresh mint leaves
  • ¼ cup almond milk

Fruit Layer:

  • Sliced strawberries and toasted coconut
  • To Garnish: fresh berries, toasted coconut and mint leaves

Instructions:

Add the chia seeds, almond milk and protein powder into a bowl, mix to combine and set aside for 20 minutes, until the seeds absorb all the liquid. Then add the honey and stir through. If you need to feed them with a little more almond milk do so. 

Add the smoothie ingredients to a blender and blend until smooth and creamy.

To assemble the jars add a layer of chia pudding, a layer of sliced strawberries and coconut and top with acai smoothie. Top the jar with fresh blueberries, raspberries and toasted coconut.

You can close the lids of the jar and set aside in the fridge over night or simply eat and enjoy right away!

Passion Fruit Summer Drink

One of my favourite things to do in summer is to go down to the beach with my friends and have picnics at sunset. I am lucky enough to not only have marvellous friends but to live in one of the most beautiful cities on earth, Cape Town. Our beaches are pristine and summer sunsets are around 8pm so it allows for extra time after work to really enjoy the evening!  There are few things as beautiful as watching the sun go down and seeing the colour palette explode over the sky.

This cocktail is great for summer because of its fresh flavours. You can take it down to the beach or simply enjoy it with friends over lunch. It's the perfect start to the weekend! 


serves 4

Ingredients:

  • 125ml mint leaves
  • 2 limes, cut into 1cm-pieces
  • 3 fresh ginger (cut into thin sticks)
  • 8 passion fruits
  • 4 oranges, juiced
  • ice cubes
  • Sparkling soda
  • vodka (optional)

Instructions:

Muddle mint leaves, the lime pieces and half of the ginger sticks in a bowl, then pour it into a pitcher.

Cut the passion fruits in half and scoop out the flesh into the pitcher.

Add juice from the oranges and ice cubes and stir around.

Top it with sparkling soda, a couple of ginger sticks and a mint leaf.

If you have opted for vodka add a single shot per glass or stronger if that is your vibe!
